I have recently discovered the amaranth. I occasionally eat it simply boiled. I love it’s taste and so I tried to make cookies with her flour. After a salted recipe, I suggest this sweet one. They are cookies with a special flavor that reminds toasted nuts. They are gluten-free and without butter and eggs: ok for everyone
These cookies are really yummy even if they have no butter. Perfect for an afternoon break, they are good also for breakfast. Usually I have them with a Darjeeling tea (you can find it also here: http://www.teainitaly.com)
