I have recently discovered the amaranth. I occasionally eat it simply boiled. I love it’s taste and so I tried to make cookies with her flour. After a salted recipe, I suggest this sweet one. They are cookies with a special flavor that reminds toasted nuts. They are gluten-free and without butter and eggs: ok for everyone

Here they are…new cookies with a strong coffee flavor and great for breakfast. They are perfect if you want to dunk them in a cup of milk. I really like them even if coffee it’s not my cup of tea!
